By the time we moved back to Fife in 2023 we’d spent almost 25 years working in wine in Bordeaux. Perhaps unsurprisingly then the list does lean quite heavily towards French wines. Our ‘house wine’, always available by the glass, is a deliciously simple Bordeaux pair from Château Bauduc owned and run by our great friends Angela and Gavin Quinney - it was literally our 'house wine' during our time in Bordeaux and of course has to be the wine we now share with our guests at The Stag.

The list is relatively short but represents a great range of classic styles and in addition to the wines that we have open and available by the glass we also offer two or three more prestigious wines by the glass using a Coravin wine serving/preserving system, so that if you fancy just a glass of something really special, then you can!

We have always thought it a great shame that wines in restaurants tend to be so expensive (and sadly not always very good) compelling diners to head directly to the proverbial ’second cheapest wine on the list’… We would rather you were not tempted to do this but instead could feel confident about exploring the list and trying better wines to really enjoy with your meal. So, when pricing the wines on the list, we have decided to add only a fixed cash margin to our wines - the same cash margin whatever the cost price to us - rather than a percentage margin, which means that the more expensive a wine is on the list the better value it is to you. Limes, lemons and gooseberries jump out of the glass, crisp refreshing and moreish. Made in the Entre-Deux-Mers by our friends Angela and Gavin Quinney.

Chateau Bauduc, Bordeaux Supérieur 2019
This fabulous red from Gavin and Angela Quinney is now showing lovely maturing fruit on the nose, blackcurrants laced with leather and tobacco. Finely textured with delicate tannins. Simply enjoy a glass or pair with your meal.

La Curiosité, Minervois 2023
Deliciously ripe and spicy Syrah-dominated blend from sun-drenched Southern French vineyards. Rich, sweet black fruits and savoury black olive notes balanced with velvety tannins.

Côtes du Rhône, Vignobles Gonnet 2022
The Rhône Valley with its ideal combination of sunshine and the cleansing Mistral winds make successful organic viticulture almost a given. Grenache and Syrah combine to produce notes of dried herbs on the nose and spicy liquorice and dark fruit on the palate, all balanced with a refreshing acidity.

Beers

We will stock some nationally available, well-known beers, in bottle and can, such as Guinness and Adnams Southwold Ales because they’re tasty products and offer good value. But our main focus will be on locally-brewed Scottish craft ales and lagers available in bottle initially and, later, on draft in keg and cask. Beers of real character that can be enjoyed at table.
